Fermentation: Pressed, settled and cold fermented. Refermented (Charmat) dosage and bottled
Wood: 5% matured in seasoned French barriques for 12 months
Nose: Doughey, lemon curd and lime zest
Palate: Lively, refreshing lifted citrus with complex dried fig and mead finishing dry and clean
